Toasted vs Light

Toasted sesame oil is dark, highly aromatic, and boasts a rich, nutty flavor. Light (or untoasted) sesame oil is pale and has a much milder taste, suitable for general cooking.

When to Add It

Because toasted sesame oil has a lower smoke point and its delicate flavor can degrade under high heat, it is typically added at the end of cooking as a finishing oil or used in cold dressings.
