Understanding Olive Oil Grades
Extra virgin olive oil (EVOO) is unrefined and extracted cold, retaining antioxidants and robust flavor. Virgin olive oil is also unrefined but has slight sensory defects. Refined or 'light' olive oil is treated to remove flaws, resulting in a neutral flavor and higher smoke point.
